When planning a trip to Trinidad, I had read about this woman in Braso Seco, a tiny community in the interior of Trinidad, who ran a bed and breakfast where she served you hot chocolate in the morning made from beans grown and “processed” by her from cocoa harvested on her property. We didn’t make firm plans for our low budget trip but when we found ourselves in the north coast town of Blanchisseuse we decided to make the treck to Braso Seco. We didn’t have a car and there was no public transport so we hitchhiked. In typical open friendly Trinidad style, the first car making the turn our way picked us up. They were a mom dad and daughter out for a Sunday ride. When they heard where we were going they offered to drive us there even though it was a major detour for them. Braso Seco is about 15-20 kilometers down a dirt road and then another dirt road that are so rough it took about 3 hours to get that 15-20 kilometers. Once there we asked some local teenagers where the chocolate bed and breakfast was and they happily took us to a gate with a small sign. We warily walked up the long drive and were greeted.by the proprietres and chocolatier, an 86 year old woman in an old worn, but clean, housedress. This was the place. Over the three days we were there, she did indeed serve us delicious thick hot chocolate with breakfast and any other time we wanted some. The property had once been a chocolate and coffee plantation run by the now owner’s father. He had come to Trinidad from Venezuela. Her husband took over the plantation and when her father died, As the years passed, she found she could not keep up as a plantation. But she still collected as much of the cocoa and coffee beans as she could, drying, fermenting and grinding them herself for personal use and the random guests that visited this remote town and remoter still, B&B. She showed us the cocoa pods growing. Since some were ripe, we opened a pod to reveal the cocoa beans inside that were the source of chocolate. The cocoa beans are surrounded by a white pulpy substance that is citrusy and refreshing. The cocoa beans encased in the white pulp are bitter, but we were encourage to suck on them to remove all the tasty white pulp, which we did. There was a faint taste of chocolate as we know it but the predominant flavor was citrus. We were told that the cocoa plants here are of the Criollo variety, the most valued. She showed us the beans in different stages of drying and explained the process of grinding and making the chocolate into bars. These bars were nothing like what we think of as chocolate bars. They were ground cocoa beans and that’s all,. They were rock hard, pulpy and pungent. When you want to use some to make a hot chocolate drink or to use in baking, you have to grate the bar. She made the chocolate drink by mixing the grated chocolate, water and sweetened condensed milk. She sold the 20 or so 1″x6″ bars she had on hand to me for $12. Back in Vermont, I had several months of rich hot chocolate memories.

Chocolate is good for the soul. Best Brownies ever! One day I think I might market this recipe: I’ve carried this with me around the world and shared with my Hosts/Hostesses. If you’re a baker like me you will use the weights measurement; but I will also post good old cups and measurements too.
Be sure to use your best favorite Bittersweet baking chocolate. Have everything gathered and weighed and room temperature when baking. What I like about baking is the exactness of measurement. I feel like one part Chemist and one part Artist. A scale is a great addition if you like to Bake.
115 g = 8 T Butter
227 g = 8 oz. Bittersweet Chocolate
110 g = 1/2 c Brown Sugar
100 g = 1/2 White Sugar
3 Eggs (reminder room temp)
10 mL = 2 tsp Vanilla another gift from the Godesses
65 g = 1/2 cup All Purpose flour
1 mL = Sea Salt or Kosher Salt
Preheat oven to only 300 Degrees. Line 8 x 8 pan with parchment paper and allow it to overhang the pan. This is so you can lift up the brownies when done. I know it sounds unnecessary but it’s worth doing.
Just push the paper down into the corners. You will want to lift the brownies out due to the texture when done.
Here’s the fun and so easy part. I can relate this story: I was doing Confections for an Event and due to the humid weather my Toffees were not cooperating. I needed something at the last final minutes and prepared several batches of these to replace the toffees……..So simple once you make these you will rely on this recipe to save you and receive Kudos from your friends and dinner guests!
Melt the butter – allow it to begin to ‘brown’ Remove from heat and allow to cool a bit
Add the chocolate – chop it up a bit for easy melting. Stir til smooth
Add both the Brown and White sugars. The mixture will become grainy it’s OK
Add the 3 eggs one at a time and the batter becomes glossy and thick
Add the Vanilla and then the flour…..Mixing only to incorporate the flour. Add the salt and mix again briefly
Really there’s like just enough flour to qualify for calling it a brownie and not a truffle!
Pour into the pan and bake for 25 – 30 min. My electric oven was just about mid time range but remember to factor for gas vs electric…….well you know your own oven, right? Secret: You really can’t go wrong because these ‘set up’ into a truffle texture so baking time is forgiving.
To check for DONE-NESS: The outer edges will be firm but the center will be slightly SOFT.
Remove and CHILL. Slice into bars. I actually slice into tiny squares because they’re so rich and almost like a Truffle Brownie. They store in ‘fridge for a month and in freezer up to 6 months. ENJOY! and AMAZE your friends and family you are a proficient BAKER! Happy Valentine’s Day XOX

I melt dark chocolate candy bars with organic coconut oil and a drop or two of peppermint essential oil, pour this mixture into molds and freeze. Yum! What a nice healthy treat for the whole family.

A great gluten free Brownie
2 c. ground almonds
1 1/2 c. sugar
2/3 c. cocoa
1/4 t. salt
4 egg whites
2 t. vanilla
Line 8″ square pan with parchment paper. Mix first 4 ingredients together. Add egg whites and vanilla and stir together – will be very thick. Spread in pan and bake at 350 for 40 – 45 minutes.
Lift out using parchment paper and cool thoroughly.

I’m salivating now, oh my goodness. When it comes to chocolate, I love most kinds (except perhaps white chocolate which in my opinion is not chocolate at all). My favourite is a Snickers or Twix bar, something with caramel and a little bit of crunch.

My favorite chocolate indulgence when it came to chocolate was my wedding day. Since my husband and I both have more than our share of sweet teeth we decided to make chocolate our theme. All of our colors from tablecloths to bridesmaid dresses were in dark and milk chocolate colors. He even wore a cummerbund of milk chocolate color. We had a chocolate fountain with strawberries and bananas on the side to dip. My mom made us a 7 tier of white/dark/milk chocolate cake. It was in the winter so drinks were mugs of steaming hot chocolate. I look back at the day and although the chocolate was so good, the sweetest thing there was my husband!

My favorite chocolate indulgence is a cake I make with real whipping cream and melted chocolate squares and roasted almonds using an angel food cake it’s almost like a truffle cake and it’s lovely and I always make at least 3 at a time because they never last!

Since I am a product of parochial school and try to give up something for Lent each year, chocolate has been the usual. My colleagues, knowing the chocoholic that I am, literally begin a campaign around this time of year for me to find an alternative – NOOOOOOOOOOO!!! they scream when they hear Lent is coming!
