Holy Mole Sauce
Chef Rick Bayless won Top Chef Masters in 2009 with his Oaxacan Black Mole, which he also made at the Mexico State Dinner at the White House the following year. This version of the traditional Mexican sauce is based on chocolate and chiles. It is complicated – more than 20 ingredients- and time consuming but those who go the extra mile to make it from scratch say they can never go back.
