WHOA! Daily Chocolate Fix #2: Matzo Roca Recipe

I’ve never met anyone who loves chocolate more than my friend and WHOA! co-founder Darryle Pollack. She claims this recipe as her own and has been posting it on her popular blog I Never Signed Up for This for about six years. I doubt this is Darryle’s recipe, but through the ages she has said it enough times to make it true, a sort of culinary squatter’s rights.

Darryle’s Matzo  Roca

4 whole matzos

1 stick butter

1 cup brown sugar

16 ounces chocolate chips

½ cup chopped walnuts (optional)

Preparation

Preheat oven to 350.

Lay matzo in a flat jelly roll pan or on cookie sheet that has been greased well.

You can break the matzos to fit into the pan.

Melt butter and add brown sugar and stir till bubbly.

Pour over matzo and spread lightly with a spatula.

Bake at 350 for 15-20 minutes.

Take out of oven and turn oven off.

Sprinkle matzo with chocolate chips and return to oven for 1-2 minutes.

It will melt quickly.

Remove from oven and spread melted chocolate with spatula.

Sprinkle with chopped nuts if you want.

Chill in refrigerator.  Break up into pieces when cold.

Can be made in advance ; put into Ziplock bags; and keep in refrigerator.  (“Not that it keeps for very  long around me “- DP)
